Ingredients
2 Tbsp. vegetable oil 1 1/2 lbs. ground beef 1 chopped medium onion 8 oz. sour cream 2 jars Corn, Black Bean Salsa 3 cups crushed tortilla chips 8 oz. shredded Cheddar cheese 1 chopped medium tomato
Directions
In a large skillet, heat vegetable oil. Saute beef 5-6 minutes, until brown; drain. Place beef in large bowl; add next 3 ingredients; blend well. In a 2-quart casserole dish, spoon enough beef mixture to cover the bottom. Arrange half the crushed chips on top of meat mixture. Cover with half the remaining beef mixture. Sprinkle half the cheese over beef. Repeat layers with remaining beef mixture, chips and cheese. Top with tomato. Bake at 425° for 10-12 minutes, until cheese is fully melted. Makes 6-8 servings.
