Ingredients
1/2 diced green pepper 1/4 cup diced onion 4 strips fried, crumbled bacon 8 beaten eggs 4 warmed flour tortillas 2 Tbsp. Corn, Black Bean Salsa Shredded Cheddar cheese
Directions
In medium skillet, sauté first 2 ingredients; add bacon. Pour eggs into skillet and cook until set. Fill each warmed flour tortilla with egg mixture, Corn, Black Bean Salsa and cheese; roll up and place in baking dish. Heat in oven or microwave until cheese melts. Makes 4 servings.
