Ingredients
1/2 cup Dried Tomato & Garlic Pesto Mix 1/3 cup olive oil 1/2 cup water 3 cups fresh vegetables (bell peppers, onion, mushrooms, zucchini) 1 Tbsp. olive oil Single pastry crust 1/2 cup crumbled feta cheese 2 eggs 1/2 cup milk
Directions
Prepare Dried Tomato & Garlic Pesto Mix as directed on jar with 1/3 cup oil and water; set aside. Sauté vegetables in oil; stir in Dried Tomato & Garlic Pesto Mix. Fill pastry crust with mixture; top with cheese. Beat eggs and milk; pour on top. Bake at 375° for 40 minutes. Makes 4-5 servings.
