Ingredients
1 1/2 lbs. boneless, skinless chicken breasts, cut into strips 2 tsp. olive oil 14.5 oz. can diced tomatoes, undrained 1/4 cup Simply Salsa™ Mix 1 red bell pepper, cubed 1 green bell pepper, cubed Prepared white or brown rice
Directions
Sauté chicken in olive oil until no longer pink; place in greased slow cooker (if you prefer, it’s not necessary to sauté the chicken first). Add next 4 ingredients to chicken; cover and heat on low 4-5 hours. Serve over hot rice. Makes 4-6 servings.
