Coconut Carrot Cake

Ingredients
Carrot Pecan Bread & Frosting Mix
1 cup water, plus 1 Tbsp. for frosting
1 cup flaked coconut
8 oz. can crushed pineapple, drained
1/2 cup raisins
4 oz. softened cream cheese


Directions
Combine Bread Mix with 1 cup water, coconut,pineapple and raisins. Spread batter into a greased 8 x 8 baking pan. Bake at 350° for 40-43 minutes or until toothpick inserted in center comes out clean. Cool completely; top with Frosting Mix prepared as directed with cream cheese and 1 tablespoon water. Makes 8-10 servings.
