30-Minute Meals: Raspberry Chipotle Glazed Burgers

Yes, today we're talking all about … Raspberry Chipotle Glazed Burgers!

Seriously. YOU GUYS. These beauties are smothered with all kinds of sweet and salty deliciousness. Smoky pancetta. Creamy Brie. And a sassy sauce, smoldering with sweet raspberry and a little splash of fresh lime, all piled on top of juicy burgers. But the best part? My kids absolutely loved them.

That's right – my five-year-old and eight-year-old boys devoured burgers topped with Brie and pancetta, and I still can't get over it.

How to Build Your Burgers

Step 1: Prep Your Patties
Combine 1½ pounds lean ground beef and 1½ tablespoons Onion Onion™ Seasoning. Form into six patties.

Tip: Indent the middle of the patties with your thumb to ensure they keep their shape while cooking! I always like to sprinkle mine with a little salt and freshly ground pepper, too.

Step 2: Find Your Fixings
Preheat your grill to medium. While it's heating up, get all of your delicious fixings ready.

You'll need:
  • 7 ounces sliced brie (with the white rind removed)
  • 4-6 slices cooked pancetta
  • 6 toasted brioche buns
  • Fresh arugula (optional)
Step 3: Get Grilling
Grill your patties, turning once, 5-6 minutes. Brush with Raspberry Lime Chipotle Sauce; cook an additional 5-6 minutes (or until the internal temperature reaches 165°F on an instant-read food thermometer). Top with Brie slices during the last 1-2 minutes.

Place the burgers on buns. Top with pancetta, a few arugula leaves and an additional drizzle of Raspberry Lime Chipotle Sauce. Ta-da!

You'll have sizzling, restaurant-style burgers that taste better than anything from your favorite neighborhood bar-and-grill. No reservations (or extra kids' menu!) required.

Tips & Hints:
  • Serve with Roasted Corn on the Cob, fresh fruit and/or waffle fries. Sweet potato fries or onion rings would be delish, too!
  • Feel free to substitute crispy bacon in place of pancetta if you can't find it in your grocer's deli section.
  • Choose a traditional or double cream Brie. (I used a triple cream variety, but it melted so quickly that I'd actually recommend a less creamy version!) 
If you're entertaining in the backyard with friends this summer, serve rosé for a lovely wine pairing, ice-cold pale lagers or raspberry lemonade.
