I have two kids who will be heading back to school shortly. It's hard to believe they will be in 5th and 6th grade already! We have started some school shopping and they are getting excited to head back. I'm really excited to have them back in a routine and using their brains for good!
All of that means it's time for me to start coming up with some after-school snack options. To keep them from reaching for the bag of chips when they get off the bus, I like to have some better options available for them. Here are a few of my kids' - and my - favorites.
Sliced apples with Creamy Caramel Sauce
All I have to say is YUM! The kids love this option. Simply slice up an apple and gently warm some Creamy Caramel Sauce in the microwave for a few seconds.
Veggies with Spinach & Herb Dip
My kids love to eat their veggies. I know, lucky mom! Mix up some Spinach & Herb Dip using Spinach & Herb Seasoning, mayonnaise and sour cream (I use plain Greek yogurt) as directed on the package. Cut up some veggies and you're done!

So there you have it. A few after-school answers to "Mom! I'm soooo hungry!" Remember, now that the kids are back in school, it's the perfect time for mom to take a break and enjoy a little quiet time with one of our delightful drink mixes.
Vanilla Bean Chai Snack Mix prep
Pour 4 cups corn or rice cereal into a large bowl.
Add 1 cup peanuts.
Add ½ cup mini M&Ms.
Add ½ cup raisins.
Top with ¼ cup (½ stick) melted butter and ½ cup Vanilla Bean Chai Drink Mix. Stir to coat.
Stir in ½ cup mini jelly beans. Enjoy!
