I know some of you parents out there are probably relieved. (Summer schedules can be CRAZY.) Some of you are excited. But some of you might be feeling a little sad and nostalgic, since it’s hard to believe your little ones are growing up so quickly. For most of us, I think it’s a bittersweet mix of all of the above.
My boys will be starting 3rd and 1st grade, so we’ve picked out their new super hero backpacks and stocked up on school supplies. And while I’d love to be one of those moms who makes food in the shape of animals for their lunchboxes every day, I have a pretty crazy full-time job, my house is always a mess, and frankly, I’m just not detail-oriented enough to live up to my Pinterest boards.
But every year, I do like to make something a little special for the first week back to school. And these cute pencil snacks are so simple – anyone can make them! In fact, you can whip them up as a surprise OR make them together as a fun activity with your kids.
Here's How to Make Your Pencil Cookies

Step 1: Stir
In a medium bowl, combine 1 packet of Berry Lime Fruit Dip Mix with 7 oz. softened cream cheese. Place the remaining 1 oz. from your block of cream cheese in a separate small bowl.
Step 2: Cut
Grab a 14 ounce package of vanilla sugar wafers. Using a sharp knife, trim one end of each wafer cookie into a point. (The cookies are delicate, so be gentle!)
Step 3: Decorate
Spread the pointed end of each cookie with a dab of the reserved plain cream cheese.
Press a mini chocolate chip into the tip to create a “pencil point.” To make an “eraser” at the blunt end, carefully add a thick dab of pink fruit dip. Repeat to make as many “pencil” cookies as you’d like!
Bonus: “Pencil” Cheese Sticks
Prefer something more savory? You can make cute pencils with string cheese, too!
For a fun “first day of school” platter, arrange a row of cheese sticks with Bugles® corn snacks at the end. Press a raisin into the tip, and add a cube of diced ham or beef stick at the blunt end to make an eraser. Serve with toothpicks and a little Champagne Garlic Honey Mustard on the side for dipping.
Not only will your kiddos love these back-to-school “pencil” snacks, you can put ‘em all together in less than 15 minutes flat.
Now that’s pretty sharp.
Tips & Hints
- Can’t find any sugar wafer cookies? Try graham crackers instead!
- Make sure your cream cheese is very soft, since the wafer cookies are delicate. You can even pop it into the microwave for a few seconds if necessary to make sure it’s easy to spread.
- If you have leftover Berry Fruit Dip, serve it with sliced apples, strawberries or grapes for a fresh, light snack.
