Bowl 'Em Over

I love improvisational cooking, otherwise known as "The Leftoverture" or "Once Around the Kitchen" at our house. The basic idea is to use what you have on hand – repurpose those leftovers, clean out the veggie bin, cook that quinoa that's been in the cabinet for months.

And "Power Bowls" are a great way to find easy success with this no-recipe version of cooking. It's simple: put a scoop of cooked grains or veggies in a bowl. Try rice, quinoa, spaghetti squash, zoodles … you get the idea. Then top it with fresh veggies, a little protein and something saucy and voila – instant healthy meal, PLUS you used up some food that may have otherwise been wasted.

We have lots 'o sauces that will add pizzazz to your bowls – Hey Garlic! Stir-Fry Sauce is one of my faves. Our Corn, Black Bean Salsa is such a healthy choice. It's loaded with flavor, but just 15 calories per serving. And BONUS! Corn, Black Bean Salsa is on special for the whole month of February.
