Buffalo Chicken Chili

From pasta to pizza to tacos, everythings comin' up Buffalo Chicken! I have seen all manner of recipes all over the internet. Each one looks more delicious than the next! We decided to jump on the bandwagon and create Buffalo Chicken Chili and boy, what a hit! Rave reviews every time. Who doesn't love that? Between game days, gatherings and dinner for the fam, you will find lots of opportunities to serve this fabulous chili. And don't let the name fool you. It's not super spicy - just a nice little kick that will tickle your tongue and satisfy your tummy. If you have any leftovers, freeze them in 1-cup containers and take them for lunch!



Buffalo Chicken Chili


  • 4 cups low-sodium chicken broth
  • 2 tablespoons Wahoo Chili Seasoning
  • 1 packet Creamy Buffalo Dip Mix
  • 2 cups cooked chicken
  • 2 cans navy beans, drained and rinsed
  • 2 (14 ounce) cans diced tomatoes
  • 15 ounce can corn, drained
  • 1 cup sour cream or plain Greek yogurt
  • Corn chips
  • Crumbled blue cheese, optional


Whisk first 5 ingredients together in slow cooker. Add chicken, beans, tomatoes and corn; stir. Cover and cook on high 4 hours or on low 6-8 hours. One hour or so before serving, place sour cream in a bowl; add 1 cup of broth from slow cooker; stir. Add to slow cooker; stir. Heat through. Serve topped with corn chips and blue cheese crumbles.

Tips and Hints

  • For the cooked chicken, you can use rotisserie, canned or a pound of cooked, ground chicken.
  • Virtually any bean will work in this recipe. I've used great northern and cannellini but you could also use black or pinto beans.
  • I HIGHLY recommend the corn chip and blue cheese garnishes. They make the chili extra delicious!
