Buffalo Chicken Chili

Whisk first 5 ingredients together in slow cooker. Add chicken, beans, tomatoes and corn; stir. Cover and cook on high 4 hours or on low 6-8 hours. One hour or so before serving, place sour cream in a bowl; add 1 cup of broth from slow cooker; stir. Add to slow cooker; stir. Heat through. Serve topped with corn chips and blue cheese crumbles.

Tips and Hints

  • For the cooked chicken, you can use rotisserie, canned or a pound of cooked, ground chicken.
  • Virtually any bean will work in this recipe. I've used great northern and cannellini but you could also use black or pinto beans.
  • I HIGHLY recommend the corn chip and blue cheese garnishes. They make the chili extra delicious!
Rated 5 out of 5 by from Amazing Chili! So good!! :) It has a little heat, and tons of flavor. It was super easy to make too. I made it for a chili cook off at my office. The yummy smell of it cooking in the slow cooker filled the office and had folks drooling. A big hit!
