The other day I was sitting down to start planning out what food to make for the holiday gatherings we are hosting in December. When my family gets together, we love to have a bunch of appetizers and snack food and just kind of graze all day long. I mean, who doesn't love having an endless supply of delicious finger foods? And they are such small bites, they can't possibly be bad for you, right? Maybe I'm kidding myself there, but I do love appetizers and snacks and once a year I like to go all-out.
When thinking about snacks, I immediately started craving caramel corn. What's not to love – delicious popcorn drizzled with dreamy caramel? My mouth is watering! I decided to pop onto tastefullysimple.com and found this super simple recipe for Easy Caramel Corn. I just HAD to make a test batch to make sure it was going to be good enough to serve my family. Needless to say, it didn't last long and I will definitely be making a double or triple batch for the holidays.
If you're looking for a snack with some sweetness, give this one a try – it won't disappoint!
Tips & Hints
- I like to use air-popped popcorn because it's drier than popcorn that has added oil or butter, and it makes a nice, crunchy caramel corn that doesn't stick to your teeth. You could use microwave popcorn instead.
- Let the popcorn cool completely before eating it (and good luck with that - I usually can't resist).
- The color of the sauce will completely change to a light caramel color when you add the baking soda.
