Cheeseburger Meatloaf

We have a pretty standard meal rotation at my house - tacos, spaghetti, pancakes and even the occasional bowl of cereal. My kids have no problem eating the same things over and over, but after awhile I get bored with them. So last weekend I decided to take a break from checking Facebook and use my internet browsing skills for something good - finding a new Tastefully Simple recipe to make my family!

We always have ground beef in our freezer, so I went to tastefullysimple.com and searched for recipes with ground beef that were also kid-friendly. After a little scrolling, I came across "cheeseburger meatloaf." My family loves cheeseburgers (and really who doesn't?), so how could I go wrong with this recipe?

Even though it looked delicious, I'll admit I was a little hesitant at first because meatloaf has always seemed like a lot of work to me (although to be honest most cooking seems like a lot of work to me!). But after a quick look in my fridge and cupboards, I had everything I needed on hand so I figured I had nothing to lose. 

And it turns out this recipe is almost as easy as making a bowl of cereal!

First, take all of your ingredients, except for the ground beef and mix them together in a large bowl:

Then add 2 lbs. of ground beef to the same bowl and stir gently to blend it all together.

Place the mixture in a greased 9 x 5 loaf pan and bake for 70-80 minutes at 375°.

That's it! It's as simple as mixing all your ingredients together in a bowl and placing it in a loaf pan. The oven really did all the heavy lifting with this recipe because it only took me about five minutes to get it all mixed together and baking. 

My kids and husband loved it! This will definitely become a new recipe in our meal rotation - especially since we also added a side of homemade french fries seasoned with Malt Vinegar French Fry Seasoning. It turned out to be the perfect twist on a cheeseburger and fries!

Ingredients

  • 3-4 tsp. Everyday Grillin Seasoning
  • 1/2 cup milk
  • 2 Tbsp. ketchup
  • 1 Tbsp. yellow mustard
  • 2-3 Tbsp. chopped dill pickles or dill relish
  • 1 cup shredded sharp Cheddar cheese
  • 2 eggs
  • 1/2 cup dry breadcrumbs
  • 2 lbs. lean ground beef

Directions

Combine first 9 ingredients in a large bowl; stir to blend. Add ground beef to egg mixture; stir gently to blend. Place mixture in a greased 9x5 loaf pan. Bake at 375° for 70-80 minutes or until cooked through and internal temperature is 160°. Drain excess fat; cool 10 minutes before slicing. Makes 6-8 servings.

Tips and Hints

  • Customize your meatloaf with your favorite cheeseburger fixings.
  • To make the French fries, I added sliced potatoes, Avocado Oil and Malt Vinegar French Fry Seasoning to a gallon resealable plastic bag and shook them to coat. I placed them on a foil-lined baking sheet and added them to the oven with about 30 minutes of cooking time left on the meatloaf.
