Chicken Hummus Lettuce Wraps

It's all about the hummus! You can use it as a dip or spread for almost anything. Tastefully Simple's Red Bell Pepper Hummus Mix is amazing. It's got bold flavor and it's good for you! I decided to use it to make some healthy lettuce wraps. I added chicken, the marinade in the Savory Grilled Chicken recipe and got a spectacularly, healthy dinner for my family.

Make sure when you prepare the hummus, you reserve the remaining liquid, like I did using this colander and bowl.

I love using my mini blender for this! It makes mixing all of the hummus ingredients SO easy! You could also use a food processor, or regular-size blender!

Chicken Hummus Lettuce Wraps


  • Red Bell Pepper Hummus Mix
  • 15 oz. can chickpeas
  • ¼ cup + 1 Tbsp. olive oil, divided
  • 1 lb. chicken breast, sliced
  • 2 Tbsp. soy sauce
  • Juice from ½ lime
  • 1 head romaine lettuce
  • ½ red bell pepper, sliced
  • ½ yellow or orange bell pepper, sliced
  • ½ green bell pepper, sliced
  • 1 zucchini, thinly sliced
  • 1 onion, thinly sliced
  • 1-2 tomatoes, chopped (optional)


Prepare hummus as directed on package. Refrigerate. Combine 1 Tbsp. olive oil, chicken, Onion Onion Seasoning, Garlic Garlic Seasoning, soy sauce and lime juice in a large resealable plastic bag. Marinate for 2-3 hours. Place chicken in a frying pan over medium heat. Cook the chicken for about 5 minutes; add the onions, peppers and zucchini. Cover and cook an additional 5 minutes. Wash and dry the lettuce leaves; place on plates. Spread 2-4 Tbsp. of hummus on each. Top with chicken and vegetable mixture. Add chopped tomatoes, if desired.

Tips and Hints

  • Add some toppings for additional flavor: cheese, sour cream, black beans or anything else you might like in a wrap.
  • Change it up by trying different veggies or even a different protein like steak or pork.
  • You could also grill the chicken and slice it up right before serving.
