Chicken Salad with Grapes

Well, it was almost 40 degrees here in MN yesterday ... yay! We're having a heat wave! Maybe the two feet of snow we still have in our backyard (not kidding!) will start to go away. Sigh. I think spring has been slow to arrive pretty much everywhere - so even though it's not super warm yet ... how 'bout we get ourselves in the mood with a fresh, springy salad? 


Chicken Salad with Grapes


  • 2 cups cooked, diced chicken breast
  • 1 cup halved red grapes
  • ½ cup chopped celery
  • ½ - ¾ cup salted cashew pieces or halves


Combine ingredients; chill to blend flavors. Serve in half a seeded melon or on mixed greens. Makes 6-8 servings.

Tips and Hints

  • Short on time? Rotisserie chicken from your local grocery store works well in this recipe. Remove the skin before you dice the chicken.
  • For added flavor, toss in a handful of chopped green onion.
  • To serve in half a seeded cantaloupe, cut the bottom of the cantaloupe to create a flat surface so your melon doesn't roll away with your chicken salad!
