Spring is in full bloom, my friends, and that means you have more reasons than ever to stay outside just a little longer. And hey, if you can grill something delicious that has your neighbors sniffing the air like bunnies? Well, that’s just a bonus.

When it comes to meal planning, grilling is a fast and fun way to change up your weeknight menu. In fact, my family is loving the May/June recipes from the Easy Grillin’ 10 Meals & More Collection, since it has a lot of fresh twists on some of our favorite foods like grilled chicken and pizza. Real-Life Cooking with Collections

Now you might already know that you can get a collection delivered to your doorstep automatically every month with TS to You – complete with beautiful recipe cards, a handy grocery list and tips for leftovers. But how do you make collections part of your regular routine?

Since making 10 new meals in a row would result in a revolt in our house from the tiny tyrants (ages 3 and 6), we’re trying two recipes each week. It’s been a fun way to liven up our regular rotation without rocking the boat too much. In fact, this is what our menu actually looks like this week:

Lemon Trifle

Bonus Dessert: Mini Lemon Raspberry Trifles
This week I made Sunny Lemon Pound Cake & Icing Mix, which came with my grilling collection. It looks fancy, but don’t be fooled. All I did was layer cubes of the cake with instant coconut pudding, whipped topping and fresh raspberries. (You can create one big trifle in a large glass bowl, or make mini trifles in clear glasses like these.) Yum!

Grilled BBQ Chicken Pizza

Ingredients

  • 1 tablespoon olive oil
  • 1 medium red onion, thinly slice
  • 3 teaspoons Green Tea Peppercorn Seasoning , divided
  • 2 (10 ounce) packages pre-baked thin pizza crusts (such as Boboli®)
  • 2 cups shredded rotisserie chicken or cooked chicken
  • ½ cup cooked and crumbled bacon
  • 3 cups shredded mozzarella cheese

Directions

  1. Prepare grill to medium-low heat. In medium skillet, heat oil over medium-high heat. Add onions and 2 teaspoons Green Tea Peppercorn Seasoning. Sauté 6-8 minutes or until softened and browned.
  2. Spread pizza crusts with Smoky Bacon BBQ Sauce. Top with chicken, bacon and sautéed onions and cheese. Sprinkle with remaining 1 teaspoon Green Tea Peppercorn Seasoning.
  3. Place pizzas on grill. Grill until cheese is melted, about 10-12 minutes. Watch crust and turn grill down if needed so crust doesn’t burn before cheese melts.

Makes 6-8 servings.

Make Ahead & Freeze: Prepare through step 2. Wrap in plastic wrap and then in heavy-duty aluminum foil; crimp and seal edges well. Label and freeze. Thaw completely. Continue with step 3.

Tips and Hints

  • Did you know that you can buy handy containers of chopped rotisserie chicken at your local grocery store’s deli counter? (I seriously had no idea. It’s changed my life.) What a huge time-saver!
  • Our family omitted the onions in this recipe (again … tiny tyrants) and added extra thick-cut bacon (because … it’s bacon). Feel free to make it your own!
  • Adding a handful of diced pineapple or chopped green peppers would also be delicious.
  • While this is a great everyday meal, it’s a fun and easy recipe for entertaining a few friends in the backyard, too. Serve with ice-cold lemonade or beer for the grown-ups!
