Here in central Minnesota, the last couple of weeks have been a bit cooler than normal. It's reminded us that soon fall will be here and the cooler weather will bring the desire for warm, hearty meals.
Fall is actually my favorite time of year. I love the crisp mornings and cozy sweatshirts. Did I mention the yummy comfort food?
I am always so excited for our fall catalog to come out. It's chock full of delicious products perfect for making scrumptious meals and more. One of my favorite returning products is Creamy Wild Rice Soup Mix. It's so creamy and delicious and best of all – simple! On a chilly day last week, I decided to make some for my family. After we got home from church, I threw it together in the slow cooker as directed on the package with 5 cups of water. While it was simmering, I sautéed some chicken breast, carrots and celery in Avocado Oil and added them to the soup. I cooked it on low for about 2 hours and it was done right in time for lunch. Yum!
I decided biscuits would make a delicious addition to my meal. I had some Bountiful Beer Bread Mix® in my pantry, so I searched tastefullysimple.com for some ideas. Bountiful Cheesy Biscuits looked delicious – and boy, were they ever! I subbed mozzarella cheese for the Cheddar and they were fabulous.
The whole family gave this meal two very enthusiastic thumbs up and asked when we could have it again. That's a win in my book!
