The low-carb craze is everywhere – and for good reason, as most of us have shifted our diets away from veggies and toward the dark side (bom-bom-bom …) carbs!
Not all carbs are bad, of course, but it’s pretty safe to say that since most of us are on carb overload, we could stand to go a few days cutting carbs.

Last night we made Spinach & Herb Shrimp Over Zoodles. With a few modifications, we ended up with a super fast dinner that fit his needs AND that we both enjoyed.

This was a combo of what my husband could eat and what I had on hand … no trip to the store necessary! We used matchstick carrots, the last of some bok choy, some leftover cooked broccoli and a small red pepper.
I also used the alternate paleo instructions for the sauce, since dairy is out for us for the moment. I made everything in the same skillet – since I was doing a veggie combo instead of zoodles.
So fast, so easy and so low carb! It was a win on all counts; just ask my honey- he loved it!
