Would it surprise you to learn that I write these blog posts because A) I like to write and B) I like to eat? Although I love food, I’ve learned to love it in moderation along with forcing my tired self on the treadmill a few times each week; this momma of three needs the energy to keep up with our crazy, busy life.
I notice when I’ve been eating too much crappy food I become sluggish and, quite honestly, a bit cranky. I’m going to blame carbs for forgetting my oil change the other day - and for the lousy weather!

My favorite recipe is the Roasted Chicken and Vegetables. Is so full of flavor and easy to make – you just put everything on a sheet pan and bake it. Plus, it’s so versatile! You can mix it up and try different vegetables. The recipe calls for carrots, Brussel sprouts, cauliflower and red onion, which is fabulous. But the second time you try this recipe, you could use cherry tomatoes, broccoli, green pepper and butternut squash. It’s amazing, delicious and super easy … and I love those kinds of meals!
