We love ham at our house, but we don't very often get a big 'ole bone-in ham and bake it up. They're big, and we're a little family (with an already very full fridge!). So this week, I set out to create an easy but elegant ham recipe. Something manageable, but delicious. I thought about ham steaks - you know, those ham discs with the little tiny bone off to one side - but my experience with those hasn't been great. They are often kind of fatty and not the right flavor for me. I ended up purchasing ½ a boneless ham, about 3½ pounds, thinking I could cut thick slices and make my own ham steaks. This turned out to be a good idea (I love it when that happens!).
Admittedly, I am prone to complicating a simple concept: I thought we could grill the freshly sliced ham steaks to get those great grill marks (it's all about appearances!), but since the ham was pre-cooked, it didn't take very long to get grill marks and we torched 'em. Dang. Good thing I hadn't used all the ham! Plan B was to use my grill pan (I wasn't giving up on those beautiful grill marks!), and it worked much better. I made a very simple pineapple salsa as the topper and oh how my family raved!
