Fun fact about me: When I was 10, my dream job was to be a semi-truck driver, live at home (with my parents) and have my mom make my lunches every day. This was my dream only because of the lunches my mom packed for my dad every day: sandwiches. She usually only made these special meat-and-cheese sammies for my dad’s lunches and if we were going on a family road trip.
Fast-forward to today. (No, I didn’t become a truck driver and don’t live with my parents anymore.) Sandwiches are my go-to for my family when we are on the go. I realized how easy they are to make and pack for a road trip or picnic. Currently, my family is packing up the car and getting ready for a road trip five hours away for a family wedding, and I’m planning these easy picnic lunches for everyone!
It’s easy to elevate a plan ham and cheese sandwich by using thin bagel buns and whipping up a batch of Tastefully Simple dip! I usually check out what’s in my pantry for cheese ball mixes and turn it into a delicious dip. Just so you know, Garden Veggie Cheese Ball Mix makes a FANTASTIC sandwich spread and veggie dipper. Just mix 1 packet with 1/2 cup mayo and 1/2 cup sour cream and ta-da! Your kids will actually eat veggies because of this dip (mine sure did)! I tried not to watch in awe as they ate carrots like they were going out of style, for fear they would notice me noticing them eating vegetables.
Picnic Tip: I bought these inexpensive bento boxes at Walmart to put everyone's meal in so I didn’t need to worry about spooning out food when we got to a park for lunch. #momwin #zerocleanup
