Easy One-Pot Meal - Southwest Chicken Quinoa Bake

Let's face it – life seems to continually get busier and busier. Just when we think things have to start slowing down, one of the kiddos asks to be involved in another activity or you get guilted into volunteering to coach their team. These are the years we need to hold on to and will treasure when our kids are off on their own … at least that's what everyone keeps telling me. Honestly, I am a really big home body and would love to be home every night cooking a nice, multiple-course meal for my family. But I also love the immense pride and pure joy I feel watching my kids do what they love, playing sports and participating in other activities. Nothing beats the feeling you get when they come running off the field with an ear-to-ear grin on their faces. So, something's gotta give, right? After all, there are only so many hours in the day. If someone has figured out how to magically create more, please let me know!

So what do you let go of? One of the easiest things to let go is making delicious home-cooked meals for your family. It can take so much time to cook and clean-up – who has time for that? It's much easier and faster to hit a drive-thru … NOT! I have discovered I can still feed my family great, delicious meals I make at home. And, as a bonus, clean up can be simple, too, if you discover the wonder of one-pot meals like I have!

Tastefully Simple has a whole meal collection devoted to one-pot meals. I'll admit I was skeptical that you could pack a lot of flavor and variety in one pot, but boy, was I wrong!

I decided to try the Southwest Chicken Quinoa Bake and it was absolutely delicious! I substituted a green bell pepper for the red bell pepper and it was still great. This dish was so easy to put together and I had plenty of time to help both kids with their homework while it was baking away. And did I mention how amazing this made my house smell? It is absolutely amazing! Everyone loved this and gave it two thumbs up.

And, best of all, I had lunch for my husband and me all ready to go for the next day. The leftovers remix recipe for Southwest Chicken Quinoa Tacos might even be better than the original!

Southwest Chicken Quinoa Bake



  1. Preheat oven to 375°F. In a greased 13x9-inch baking dish, combine all ingredients; salt and pepper as desired. Stir.
  2. Bake, covered, 30 minutes. Stir. Continue baking, covered, 20 minutes; stir. Continue baking, uncovered, 10 minutes or until liquid is absorbed.
  3. Let stand 10 minutes before serving.
