Everything Breakfast Sandwich - because mornings are hard!

Summer has somehow slipped by yet again this year as we are knocking on fall's door. For many of you, that means school has already started, or will be very soon, and the morning chaos and stress is back in full force. I am so not a morning person … just ask my husband. I am a snooze addict, running out the door with wet hair, missing a shoe, five (or 15) minutes late kind of girl. Sadly, that means that breakfast is almost always an afterthought. Thank goodness for instant oatmeal! BUT I may have found the answer to my morning woes with this Everything Breakfast Sandwich.

These sammies can easily be prepped the night before, popped into the oven and handed out at the door as your family rushes to start their day. The best part is that with a little prep, these are easier than pouring milk! A great breakfast isn't just reserved for Saturday mornings anymore!

  • 1 package Simple Sourdough Bread Mix
  • 4 tablespoons Everything Topper , divided
  • 1 cup warm water
  • 1 teaspoon salt
  • 2-3 tablespoons butter, softened
  • 6 eggs, scrambled
  • ½ pound prosciutto
  • ½ pound thick-sliced Canadian bacon
  • 6 slices Cheddar cheese
  • 6 slices mozzarella cheese


  1. Prepare Simple Sourdough Bread Mix as directed on package with warm water and salt, sprinkling 1-2 tablespoons Everything Topper onto the top of bread dough before baking. Cool completely.
  2. Preheat oven to 350°F. Slice bread into about ½-inch slices; butter one side of each piece.
  3. In a 13x9-inch baking pan, arrange a layer of bread, butter-side-down. On each slice of bread, layer ½ slice Cheddar cheese, prosciutto, Canadian bacon, eggs and ½ slice mozzarella cheese.
  4. Place another slice of bread, butter-side-up, on top. Repeat for as many sandwiches as you can make until you run out of bread.
  5. Sprinkle the top of sandwiches with remaining Everything Topper and bake until golden brown and cheese is melted, about 12-15 minutes.

Tips and Hints

  • Add 1-2 tablespoons of milk and a pinch of salt to your eggs before scrambling; it adds flavor and makes them extra fluffy!
  • You could easily substitute a fried egg for the scrambled eggs.
  • Pick your favorite breakfast protein: bacon, pepperoni or ham!
  • Customize your sandwich by adding veggies like peppers, onions and arugula.
  • Prep ahead! Assemble these bad boys the night before and simply bake in the morning.
