There's no doubt about it: the holiday season is my favorite time of year. But it's also the busiest.
From shopping to baking to wrapping gifts to extra activities with the kids, I think my list is just as long as Santa's right now. (Though hopefully our Christmas Eve won't involve quite that many stops on the way to Grandma's house.)

How to Make It Tonight

Step 1: Prep & Pound Your Chicken
Preheat your oven to 425°F. Trim any fat from 5 (5-6 oz.) boneless skinless chicken breasts, and then pound them to about ¼-inch thickness. Sprinkle with a little salt and freshly ground pepper.
Then line a large rimmed baking sheet with aluminum foil. Spray it lightly with no-stick cooking spray.
Step 2: Stuff & Bake
Top each chicken breast with a slice of provolone cheese and 4-6 spears fresh asparagus. Roll 'em up and secure with a few toothpicks. (I know it looks a little weird. But hang in there – I promise it will be worth it!)
Place 'em on your baking sheet, seam-side (and toothpick-side!) up. Bake about 15-20 minutes.
This is probably obvious, but carefully remove the toothpicks.
Step 3: Get Saucy
To make the sauce, place 8 ounces cream cheese in a microwave-safe bowl. Microwave 1 minute. Whisk in 1 cup 2% milk and 1 packet Artichoke & Spinach Warm Dip Mix.
Continue microwaving 30 seconds. Whisk in ½ cup grated Parmesan cheese; microwave another minute or so, until the sauce is thick and smooth.

Tips & Hints:
- Before pounding your chicken breasts, wrap them in clear cellophane or place 1-2 in a large resealable plastic bag at a time, squeezing out as much air as possible. Then pound the chicken breasts using the flat side of a meat mallet (or even a rolling pin in a pinch).
- Looking for other easy side dish ideas? Try rice pilaf, baked sweet potatoes and/or crusty dinner rolls.
- If you have leftover cheese sauce, toss it with hot pasta or steamed broccoli. Or use it as a base for chicken pizza the next night!
