Fiesta Shrimp Tostadas

When I think of the word fiesta, I think tacos, ice-cold beer, fun music and bright colors. Nothing says fiesta more than Cinco de Mayo.

Did you know that Cinco de Mayo is celebrated more in the US than in Mexico? Neither did I! In fact, it’s not even a national holiday in Mexico. It has, however, become a fun celebration of Mexican heritage in the US.

Shake things up this year! Instead of reaching for tacos, try something new like Fiesta Shrimp Tostadas. To me, tostadas taste like a cross between a taco and giant chip. They are crunchy and a little bit salty. As an added benefit, you don’t need to bake, fry or warm them up. That makes them the easiest go-to in the taco world!

So bust out a sombrero, get the music pumping and have a Tastefully Simple-style fiesta this Cinco De Mayo!

Fiesta Shrimp Tostadas

Ingredients

  • 1 avocado, mashed
  • 4 tablespoons Garden Guacamole Starter
  • 6 tostadas
  • 6 tablespoons sour cream
  • 6 tablespoons feta cheese
  • 1 package pre-shredded lettuce or a head of butter lettuce
  • 6 skewers
  • 18 medium-to-large raw shrimp, thawed if frozen

Directions

  1. Prepare grill to medium heat. If you are using wooden skewers, remember to soak them in cold water for 30 minutes prior to grilling.
  2. In a small bowl, combine mashed avocado and Garden Guacamole Starter; set aside. Set out tostadas, sour cream, feta cheese and lettuce in an assembly line format.
  3. Place 3 shrimp on each skewer. Season them with Fiesta Party Seasoning. Place on grill and cook until shrimp is cooked through and pink, turning once, about 7-8 minutes.
  4. Assemble tostadas - layer tostada, sour cream, lettuce, guacamole, shrimp and cheese.

Makes 6 servings.

Tips and Hints

  • You can easily substitute chicken, pork or steak for the shrimp.
  • Don’t have tostadas in your cupboard? Swap in hard- or soft-shell tacos or taquitos.
  • Serve leftover Garden Guacamole with chips and salsa.
  • If you don’t have a grill, the shrimp can be prepared on the stove top, broiled or baked just as quickly and easily.
