Fix It Fast: Black & Blue Beef Stroganoff

At our house, we're still shopping for last-minute gifts. Baking treats for teachers. Building gingerbread houses with our kiddos at two different schools. Doing laundry and packing suitcases for Grandma's house. And don't even get me started on the wrapping. (Mostly because, well, I haven't actually started it yet. But I'll be wrapping gifts for kids in need at the YWCA tomorrow night, so hopefully I'm still on the “nice” list … even if I'm behind on everything else.)

Here's my point: with all of the holiday craziness, who has time to make dinner?

Good news … you do! So do I. That's because it only takes 30 minutes with today's featured recipe: Black & Blue Beef Stroganoff. With juicy sirloin, hearty egg noodles and tender mushrooms all smothered in a cheesy sauce, this spicy skillet pasta recipe is included in the Fix It Fast 10-Meal Kit. Step 1: Slice Your Steak
Slice about 1 pound boneless beef sirloin steak into bite-sized cubes.

In a large skillet, heat 1 tablespoon vegetable oil over medium-high heat.

Step 2: Sauté & Stir
Toss your cubed steak and 1½ tablespoons Onion Onion™ Seasoning into the hot skillet; season with a little salt and pepper. Sauté 2-3 minutes. Stir in 8 ounces sliced fresh baby bella mushrooms and 1 teaspoon dried dill weed.

Now that your kitchen smells amazing, keep sautéing another 2-3 minutes.

Step 3: Simmer
Add 2½ cups beef broth. (Use the reduced-sodium variety, if you can!) Bring to a boil and stir in 10 ounces extra wide egg noodles.

Cover and simmer about 6 minutes, stirring occasionally. Remove the cover; simmer 6 more minutes or until the noodles are tender, stirring as needed. Stir in 1 packet Black & Blue Cheese Ball Mix.

Remove from heat, and add ¾ cup light sour cream.

Season with salt and pepper, and stir it all together. BOOM.

Tips & Hints:
  • Serve your stroganoff with Sautéed Kale or mixed greens, garlic toast, fresh fruit and/or cottage cheese.
  • Not a big fan of mushrooms? Just leave ‘em out. Remember, you can always customize recipes to fit your family.
  • On a related note, this stroganoff does have a bit of a kick! If you have young kiddos in your house, I'd suggest using only ½ packet Black & Blue Cheese Ball Mix or adding more sour cream to mellow the spices.
  • If your pasta seems a little dry, add a splash of milk or half & half. It works great for reheating any leftovers, too!
