Fix It Fast: Pan-Seared Steak with Black & Blue Sauce

Parenthood is pretty amazing. It also requires a lot of multi-tasking.

Yesterday my yoga/pilates instructor brought her adorable two-year-old boy to our noon class because her baby-sitter was ill. Over the course of the hour, he wanted hugs and kept climbing up her body, even when she was standing on one leg (giving new meaning to "Tree" pose, by the way). And during the ab exercises, he actually sat right on her stomach, happily munching on chicken nuggets while she continued to lead us through the workout.

It was wildly entertaining. It was also a testament to how moms can – and sometimes have to – do pretty much anything and keep going without missing a beat.

Now maybe you don't have anyone actually hanging on your every move. But if you're a parent, you probably spend a lot of time making sure your kids have full and happy tummies, no matter how busy you get. And that can be a struggle, especially on crazy weeknights. So how do you keep it all in balance?

Behold: the Fix It Fast 10-Meal Kit! It has everything you need to make 10 fresh and fantastic meals – fast. In fact, every dinner is ready from start to finish in 30 minutes or less. Today's recipe for Pan-Seared Steak with Black & Blue Sauce, which is included with the kit, is one of my new favorites!

This tender steak is topped with a smooth, creamy sauce that's full of steakhouse spices and mild blue cheese. (FYI, the sauce does have a little kick, so if you have kiddos, I recommend serving it on the side.) But it's absolutely delicious!

Step 1: Season
Heat a large, cast-iron or non-stick skillet over medium-high heat. (I used my trusty grill pan. If you prefer, you can even fire up your grill, weather permitting!) Season 1½ pounds boneless steak with a little salt and freshly ground pepper.

Choose ribeye, flat-iron or sirloin steaks … whatever you prefer!

Step 2: Sizzle & Slice
Add the steaks to your preheated skillet. Sear, turning once, about 8-15 minutes or until they reach your preferred level of doneness (145°F for medium-rare, 160°F for medium if you're using a food thermometer).

Before slicing, let those beauties rest about 5-10 minutes. That works out perfectly while you make your sauce!

Step 3: Sauce
Ok, using a medium bowl, microwave 8 ounces cream cheese for 45 seconds. Add 1 cup 2% milk and 1 packet Black & Blue™ Cheese Ball Mix.

Whisk it all together, and microwave 1 minute. Continue microwaving another minute or until heated through and smooth. (If it seems a little runny, just heat it a little more and whisk again – I promise it will thicken up!) Serve it over the sliced steak, and sprinkle on a few chopped, fresh chives for garnish.

With crisp apples, crunchy walnuts and crumbled blue cheese, it's honestly one of the best salads I've ever eaten. (I made an extra helping and had it for lunch for two days in a row. And I'm planning to make it again for Thanksgiving. It's that good.)

And voila! You've got a delicious dinner in less than 30 minutes flat. And whether your day includes kids, yoga, work or a million other things, well – you still may not have time to meditate. But you'll definitely have more time to breathe.

Tips & Hints:
  • Before you season your steaks with salt and pepper, pat them dry with a paper towel. By absorbing any excess moisture before cooking, the steaks will get a better, more even sear on the outside.
  • For other easy side dishes, serve your steaks with mashed sweet potatoes, sautéed mushrooms or roasted butternut squash sprinkled with a little nutmeg.
  • If you have leftover cheese sauce, toss it with hot pasta or spoon it over a baked potato for lunch. Yum!
