Honestly, we eat pizza at least once a week in our house. As a busy mom with two young boys, two jobs and (roughly) a million loads of dirty laundry at all times, I'm usually in survival mode by Friday night. And whether that means paying a delivery driver or grabbing something out of the freezer, pizza can be an absolute lifesaver.
But let's be honest: man (and woman) cannot live on pepperoni alone. And I think we all feel better about making a fresh dinner for our families – especially when it's fast.
So what's a busy gal – or guy – to do? Today we're making Prosciutto Bacon Jam Pizza! Seriously, you guys – this one is AMAZING. Tender prosciutto, smoky-sweet bacon and salty crumbled cheese, all piled on a crispy crust. And while it makes a generous family dinner, this special recipe would be a wonderful for holiday entertaining too. Just cut it into smaller slices for a gorgeous appetizer, guaranteed to wow your guests.

- Step 1: Crust. Preheat your oven to 425°F. Lightly grease a 17x11-inch rimmed baking pan with cooking spray. Then unroll 1 (13.8 ounce) tube of refrigerated pizza crust and press it into your baking pan. Bake for 3 minutes.
Step 2: Sauce. Remove the crust from the oven. Spread ½ cup Bacon Pepper Jam over the top. (Isn't that pretty?)
Step 3: Toppings. Next, layer with about 4 ounces prosciutto, sliced crosswise.
Sprinkle with ½ cup thinly sliced red onion and a 3.5 ounce package of crumbled goat or feta cheese. (Since we have picky kiddos, I omitted the onion and used feta cheese. Remember, you can always customize Tastefully Simple recipes for your family, too!)
Pop it back into the oven. Bake for 10-12 additional minutes or until the crust is golden brown. Remove from the oven and sprinkle with a handful of peppery arugula. Ta-da!
You'll have a deliciously different twist on pizza night - all in less time than it would take a delivery driver to get to your door. And that's a beautiful thing.
Tips & Hints:
- Having trouble finding prosciutto or arugula at your grocery store? Substitute Canadian bacon and fresh spinach instead.
- If you're a big prosciutto fan, get some from your local butcher shop or ask for it fresh (and sliced ultra thin!) from your deli counter. You'll be amazed – it's much more tender than the pre-packaged variety!
- Serve with a tossed salad, breadsticks, cottage cheese and/or fresh fruit. (And maybe a glass of white wine, if you've had a long week.)
