It's too easy to take our friends for granted, isn't it? We can get distracted by all the crazy busy-ness of everyday life and forget to appreciate those who help us celebrate the good times and get through the bad ones.
I don't often entertain, but every other year or so I plan a backyard gathering with a couple dozen of my friends. It's a time to get caught up on the latest news, enjoy the flower gardens, sip some iced tea and enjoy a sampling of delicious desserts.
TIP: Tastefully Simple's Silicone Bar Pan makes it so easy to create a variety of individual-sized treats. If you're like me and can't cut a straight line in a pan of brownies to save your life, this pan is a godsend.
In planning these get-togethers, I've discovered that certain flavors go together as beautifully as good friends do. For my last garden party, I served these deceptively simple, but amazingly delicious tidbits:
Berry Delicious Truffle Fudge Brownies
Nothing could be easier than these little Truffle Fudge Brownies topped with whipped cream mixed with sweet Berry Lime Fruit Dip. I use a piping bag and tip to give the topping a pretty flourish.
Absolutely Almond Rhubarb Strawberry Petit Fours
I sliced baby Absolutely Almond Pound Cakes in half, then in thirds horizontally. I filled the layers with tangy Rhubarb Strawberry Fruit Spread. Simply delicious!
Sunny Lemon Princess Cakes
It's worth a little extra effort to show how much your friends mean to you. I gave my girlfriends the royal treatment by attaching white chocolate crowns to the tops of baby Sunny Lemon Pound Cakes drizzled with the included lemon icing. To make the crowns, I just printed out a pattern I found online and placed a sheet of parchment paper over it. Then I piped melted white candy melts over the pattern and let harden. A little spray of edible gold food coloring spray added a little sparkle.
Don't wait for next year's International Friendship Day to spend some quality time with your best buds. A few sweet indulgences and a lot of laughs is good for the soul.
