Frozen Strawberry-Mint Mojitos

In my world, seasons don’t come and go at the precise moment the calendar tells us they do. In my world, June 1st equals the start of summer. Yesterday! In my world, yesterday was the start to summer!

And summer is the time for your most gorgeously fruity, famously frothy, deliciously icy, froo-froo-iest froo froo drink! Amiright? Just go with it … I’m right.

I’m in love with our Strawberry Daiquiri Mix this summer. It’s extraordinarily delicious, super simple to make and it comes with a gorgeous strawberry-lime rimmer so your summer cocktails can be as cute as they are delicious.

And I’ve come up with an amazing Strawberry Mojito and a fun little tip for rimming your glasses.

I think it’s best to get your glasses rimmed first. That way when you’re done blending your drink, you can just pour right into the glass. No time wasted and no drinks melted while you take time to rim your glasses.

Start by getting all your glasses out (I love to use mason jars!) and cut a lime into wedges. Remove the bag with the rimmer from the drink mix pouch and pour the rimmer onto a small dish.

Rub a lime wedge around the rim of each glass, squeezing just a bit to get plenty of juice onto the rim.

Then, just dip each glass into the rimmer! Wiggle it around a bit to be sure you’re getting a nice coating.

Repeat for each glass.

Next, add your liquid ingredients to your blender. Then pour in the Strawberry Daiquiri Mix and mint leaves. Blend until the mix is dissolved and the mint leaves are tiny little pieces. Add ice to the blender; blend until smooth.

Pour your finished mix into your nicely rimmed glasses. Use slices of lime and even some strawberries for a fun garnish.

Frozen Strawberry-Mint Mojito

Ingredients

  • 1 lime, cut into slices
  • 1 cup light rum
  • 1½ cups water
  • Strawberry Daiquiri Mix
  • 4 Tbsp. lime juice
  • 25 mint leaves
  • 5 cups ice
  • Strawberries, for garnish (optional)

Directions

Remove small rimmer pouch from bag; pour onto a plate or small dish. Use a lime wedge to wet the edge of each glass; dip into rimmer. Combine rum, water, mix, lime juice and mint leaves in blender; blend until mix is dissolved and mint leaves are in small pieces. Add ice; blend until smooth. Pour into rimmed glasses, garnish with additional lime wedges and strawberries; serve.

Tips and Hints

  • This would be great with flavored rum or vodka. Think lime or strawberry.
  • The liquid portion of the drink tends to settle to the bottom of the glass while the ice floats up at the top. This isn’t a problem in the glass if you have a straw and give it a quick stir. But letting these sit in a pitcher might be a bit tough. I kept the drink in my blender and gave it a quick zing before pouring.
  • You’ll probably have leftover rimmer. Toss it in a plastic bag and save it for another fun cocktail.
