Today we’re talking about … quinoa! Did you know that quinoa is considered a superfood? It’s incredibly nutritious, packed with protein, fiber, antioxidants, calcium and iron. In fact, it’s one of the most protein-rich foods you can eat. And it’s a wonderful choice for gluten-free and vegetarian lifestyles.
There are so many ways to incorporate into your favorite dishes, too! Salads. Pilafs. Soups. Buddha bowls. Even breakfast.
Here are a few new ways to stir it up this week!
Idea #1: Summer Quinoa Salad
Sweet corn. Crisp cucumbers. Juicy tomatoes. Full of fresh summery flavors, this delicious quinoa salad is loaded with protein and garden veggies.
Honestly, this one has become my new go-to lunch. So colorful, light and refreshing, it would make a great grab-and-go potluck dish for summer picnics and block parties, too!

Idea #2: Quinoa Black Bean Tacos
Looking for a new twist on taco night? Swap out ground beef for healthy whole grains! In a medium saucepan, prepare ½ cup quinoa as directed on the package with 1 cup water, stirring in 1 tablespoon each Magic Chicken Taco Seasoning and tomato paste before bringing the quinoa to a boil.
Meanwhile, rinse and drain 1 (14 oz.) can black beans. Once the quinoa is cooked and fluffy, stir in the black beans. Season with salt and pepper to taste. Spoon the filling into small flour tortillas, and top with chopped romaine lettuce, crumbled feta and fresh avocado.
Tip: To make your own vegan avocado crema, combine 1 chopped avocado, the juice of 1 lime, salt and a few sprigs of cilantro in a mini blender. I love to add a dash of Garlic Pepper Seasoning, too. Blend until smooth, and drizzle on your favorite tacos and burrito bowls.
Idea #3: Sun-Dried Tomato Quinoa Salad
Filled with fresh Mediterranean flavors, this sunny salad brings together baby spinach, fluffy quinoa, sun-dried tomatoes and pine nuts. Plus, it’s all tossed together with tangy dressing bursting with a bright splash of lemon.
