Many times after the holidays I feel like I've eaten way too much of everything. Really. Sometimes you want to eat something that isn't going to make your stomach hurt or make your feel overly full. And if nothing else, you want to feel good about what you're eating again! This salad did all of that for me.
This salad has grains, veggies and good fats. It's an energy driver instead of drainer. And, I was grateful to eat something that didn't put me into an instant food coma. If you want it to be more of a full meal, you can grill or bake a chicken breast or fish and put that on top. Either way, it's delicious. And it didn't set me back on my New Year's resolution to eat cleaner and healthier.
