Greek Quinoa Salad

Many times after the holidays I feel like I've eaten way too much of everything. Really. Sometimes you want to eat something that isn't going to make your stomach hurt or make your feel overly full. And if nothing else, you want to feel good about what you're eating again! This salad did all of that for me. 

This salad has grains, veggies and good fats. It's an energy driver instead of drainer. And, I was grateful to eat something that didn't put me into an instant food coma. If you want it to be more of a full meal, you can grill or bake a chicken breast or fish and put that on top. Either way, it's delicious. And it didn't set me back on my New Year's resolution to eat cleaner and healthier.

Greek Quinoa Salad

Ingredients

Directions

Bring the chicken broth to a boil. Add in the quinoa. Cook for 12-15 minutes or until little "tails" appear. Strain and refrigerate. Depending on the variety of quinoa, you may need a little more or less broth and a little more or less cooking time. (Refer to the information on the package.) While the quinoa is cooking, mix your dressing by combining Spinach & Herb Dip Mix, Roasted Garlic Infused Oil, Garlic Garlic, red wine vinegar, lemon juice, salt and pepper. In a separate bowl, mix together the veggies; pour dressing over the top. Mix in the cooled quinoa; add feta cheese. Refrigerate around 1-2 hours or until serving. Sprinkle with a little additional feta when serving.

Tips and Hints

  • To be quick, use the time that the quinoa is cooking to prepare your dressing and vegetables.
  • If you want to serve this hot, I'd replace the cucumbers with thinly sliced zucchini.
  • Add your favorite lean meat to make it a bigger meal.
  • This salad stays good for several days. I packed leftovers for my lunch.
  • Feel free to mix up the veggies. Add in some shredded carrots, mushrooms, broccoli - anything goes!
  • If you like spicy, try adding some pickled peppers. I definitely will next time.

Rated 5 out of 5 by from first time trying quinoa with success I cannot believe how delicious this is! I tried making quinoa twice before with little success - it always tasted bitter to us. For this recipe I did replace the red wine vinegar with Tastefully Simple's Strawberry Balsamic Vinegar from Modena -- that may have made a difference making ours nice and sweet. I worked out calories on my fit app and it came to about 300 for an entire cup prepared. So works out to be a perfect lunch for me. Honestly, I'm always looking for healthy options to bring to BBQ's and this will be perfect!

Rated 5 out of 5 by from This is fabulous! I try to make great recipes with not a lot of meat in them on a regular basis. I've recently discovered quinoa and just love it! This salad is delicious and I will make it again and again! I used tri-colored quinoa for even more color :-)
