Grilled Pineapple Right Side Up Cake

As a wife and mother of three active kids I'm always looking for ways to increase family time. Often times during summer evening meal preparation my husband and kids are outside grilling and I'm in the kitchen baking dessert. I decided I wanted to be outside with my family, but I knew forgoing dessert might not be an option. You can imagine my excitement when I came across this recipe. I baked the cake ans sliced the fresh pineapple ahead of time. When it was time for everyone else to go outside I got to go along too. Grilling this delicious dessert was so easy and fun. I was amazed at how much flavor the grilling process added to the dish.

Prepare cake as directed on package with water and butter. Bake at 325° for 55-60 minutes. Cool, slice. Grill pineapple rings until heated through and grill pound cake slices until lightly browned. Serve pineapple on cake slices; top with ice cream. Makes 9 servings.

Tips and Hints

  • Lightly coat your grill with vegetable spray before grilling the pineapple rings.
  • Canned pineapple may be used instead of fresh, but may fall apart more easily than fresh when grilled.
  • French vanilla ice cream is a nice alternative to caramel ice cream.
  • Top each dessert with a stemmed maraschino cherry if desired.
