If you're like me, you have once again resolved to start the new year off with a healthier lifestyle. I do try to feed my family healthy meals, but it’s easy to fall off the bandwagon over the holidays. Now is the perfect time to jump back on and kick off the new year. This delicious Teriyaki Chicken Quinoa Bowl is a great quick family dinner, and also makes a great lunch option. Simply prepare on Sunday afternoon and you have a delicious, healthy lunch all week long! And best of all, it’s super simple!
Sauté about 2 pounds boneless, skinless chicken breast in about 1-2 Tbsp. of olive oil over medium-high heat until internal temperature reaches 170°.
Reduce heat to low, add about 2/3 cup Honey Teriyaki Sauce and stir well. Simmer while preparing other ingredients.
Prepare about 1½ cups quinoa as directed on package with water, adding 1 Tbsp. of Garlic Garlic to water and quinoa while cooking.
Steam broccoli, Brussel sprouts, red onion, zucchini and carrots in a steamer for approximately 20-25 minutes or until vegetables are tender. If you don’t have a steamer, you could also sauté or microwave the vegetables.
Combine chicken, quinoa and vegetables bowls and enjoy.
