(With two young boys, my husband and I aren't exactly jet-setters either ... and most days we're still walking through six inches of snow here in the Midwest, instead of dipping our toes in the water and strolling in the sand.)
But guess what? You can enjoy a little taste of the tropics ... anywhere!
No need to pack your bags – just grab a skillet. Today we're making island-inspired Tropical Shrimp Tacos, filled with succulent shrimp, sweet pineapple, juicy mango and all kinds of fresh, bright flavors. CULINARY TIP: before you start cooking, chop, peel and prep any necessary ingredients first. You'll be more efficient – and less likely to overcook anything – if it's all within easy reach!
Step 1: The Shrimp
Now ... onto the tacos! You'll need 1½ - 2 pounds raw shrimp, peeled and deveined.
Note: If you're short on time (or if peeling raw shrimp makes you a little squeamish), simply buy peeled, cooked shrimp instead and cut your cooking time in half. As one of my co-workers likes to say, "You do YOU, honey."
Step 2: The Salsa
Time to grab your cutting board! To make the pineapple salsa, you'll need:
- 1 cup diced fresh pineapple
- 1 diced mango
- 8-10 sliced grape tomatoes
- 1 sliced small jalapeño (optional – use it if you like a little heat!)
- ¼ cup minced red onion
Toss it all into a medium mixing bowl with ½ cup crumbled queso fresco cheese and 2 tablespoons Tropical Tequila™ Sauce (which is one of my favorite new sauces, by the way!). Season with salt and pepper, tossing it all together to coat.
Step 3: The Skillet
In a large skillet heat 1 tablespoon of vegetable oil over medium-high heat. Add the raw shrimp, and sauté until cooked through and opaque in color, about 5-6 minutes. (If you're using cooked shrimp, just reduce cook time to 2-3 minutes to heat it through.)
Add 4 tablespoons Tropical Tequila™ Sauce and continue sautéing 1-2 minutes or until it's deliciously caramelized.
Gently warm 10-12 (6-inch) flour or corn tortillas and serve your tacos topped with pineapple salsa and a little fresh cilantro. That's it!
Talk about a sweet taste of summer ... and making dinner a breeze!
Tips & Hints:
- Serve with chips and guacamole or a Mexican-style salad. If you're entertaining, these shrimp tacos are perfect with margaritas, too.
- If you're not a seafood lover, substitute boneless, skinless chicken breasts in place of shrimp.
- Can't find queso fresco at your local grocery store? Try feta crumbles instead.
- Feel free to add your favorite fruits and veggies, too. Diced avocado or chopped red bell peppers would also be delicious!
