Summer finally seems to be in full swing here in Minnesota (knock on wood). And this year, since our winter seemed to last a full 13 months, I’m really looking forward to giving my oven a break. Don’t get me wrong - I love making some warm and cozy casseroles, but summer recipes seem to always be on the lighter side and grilled!
Speaking of summer recipes, I have a delicious no-bake cheesecake recipe to share with you! And I have a feeling that this will be the dessert I bring to all summer get-togethers. It’s super easy and so light and tasty. It can easily be doubled and who doesn’t like a fruity cheesecake?
Let’s talk about the layers:
First, make the crust. And when I say no-bake, I mean NO bake. This crust doesn’t need to go in the oven. Just mix up crushed graham crackers, melted butter and a pinch of salt. Press it into a greased 8x8 pan.
Next, spoon a layer of Rhubarb Strawberry Fruit Spread onto the crust.
Then mix the cream cheese and a packet of Raspberry Peach Cheese Ball Mix until smooth. Fold in whipped topping and spread on top of the Rhubarb Strawberry Fruit Spread.
The next step is the only difficult one: you have to let it chill in the fridge 1½-2 hours before digging in. In instances like this, I would suggest leaving a little of the cheesecake batter on the spatula … to tide you over. (I may have done this myself.)
After it’s chilled, top with raspberries and peach slices. Then cut into squares and dig in to your delicious summer treat!
