Macaroon Brownie Nests

Spring is here!

The birds are chirping. The sun is shining. And the world is officially in bloom.

Whether you're planning a springtime brunch or bringing out your Easter best, celebrate with a bright, beautiful table. Relax – we're here to help!

Today we're making darling desserts with our rich, chocolatey Truffle Fudge Brownies. These cute treats are topped with sweet coconut, and a few chocolate eggs are nestled in the center to create the perfect little "nests."

These individual desserts can do double-duty as decorations or place settings, too. (And if you're making 'em for kids, pair a marshmallow chick with each one!)

Happy baking!
– Jen

Macaroon Brownie Nests

Ingredients

  • ½ cup (1 stick) melted butter
  • 2 large eggs
  • 14 oz. bag flaked coconut
  • 14 oz. can sweetened condensed milk
  • 1 egg white
  • Candy-coated chocolate eggs for garnish

Directions

Preheat oven to 350°. Combine first 3 ingredients in a medium bowl. Line muffin tins with paper liners; fill half-full with brownie batter. In a separate bowl, combine coconut, sweetened condensed milk and egg white; spoon into muffin tins, gently spreading over brownie layer. Bake 18-22 minutes. Cool in pan about 5 minutes; transfer to cooling racks. While still slightly warm, lightly press 2-3 candy eggs into the center of each nest. Makes 14-16 nests.

Tips and Hints

  • Don't skip the paper liners. If you just grease your muffin tins, these will stick like glue. Not that I speak from experience. (Ahem.)
  • You can also make these into about 30 mini muffins. Just reduce the bake time to about 15-17 minutes, and use mini cupcake liners.
  • These would be fantastic with our Gluten-Free Fudgy Brownie Mix, too!
  • If you'd like to make these throughout the year, garnish them with 2-3 whole almonds instead of candy eggs; drizzle with swirls of melted chocolate.
Rated 5 out of 5 by from Pure decadence I made these for Easter, and they were a huge hit! They turned out nearly identical to the pictures in the blog. I used parchment paper liners that I found at the local grocery store, and they did not stick. Super cute, and SO delicious.
