Today I’d like to share with you my love of meal prepping and hands-free cooking, aka: slow-cooking.
I’ve always thought that making meals ahead of time was a little intimidating; I felt like I have to prepare the whole meal and stick it in the freezer. (Not saying I don’t love having freezer meals on the ready, because those are definitely a life saver, but I don’t always have time to put together full meals ahead of time.) I started a new routine after I had an "oh, crap!" moment.
It was a Sunday night and I realized dance class for my daughter would start on Monday. And since we had gone out to eat during the weekend, I didn’t want to go out again. I looked at the recipes I selected for the week and found a slow-cooker recipe. I didn’t want to have to prepare the food in the morning before work – because #momlife – so I prepped it on Sunday night. I had all the ingredients chopped and measured out and all I had to do in the morning was put all the prepped food in the slow cooker and turn it on. Game changer. And all I had to stress about was finding dance shoes!
Not only can you do this with slow cooker recipes, but any recipe or for snacks. Prepping the night or weekend before for meals has saved me a ton of stress at night when I get home from work. You can prep as far ahead as you want, too. I usually get all the veggies washed, cut and measured out 1-2 days before meals. I’ve also noticed that when the meal is basically throw-together worthy, I think less about eating out.
