Mediterranean Chicken Breasts

Think about the last celebration you went to (a wedding, an awards ceremony, any type of banquet). What were they serving? Usually, chicken with an Italian-style sauce. They typically serve this type of meal because people like it, it's easy enough to prepare and it's expected at "fancy" gatherings.

So my challenge to you is to have your own "fancy" night at home. Chicken with sauce is actually easy to make, and you can have a complete dinner on the table in less than an hour (including bake time!). Make your own celebration - the last day of school, an especially productive day of chores, the season finale of your favorite show - and serve a celebration-ready meal!

Combine remaining ingredients; spoon over chicken breasts. Bake at 350° for 35-45 minutes or until chicken is thoroughly cooked. Top each serving with a dollop of Spinach & Herb Dip mixture.
