Mini Broccoli Chicken Pot Pies

Fall has arrived, and the cooler weather has me wanting to get in the kitchen to prepare some home-cooked comfort foods like soup, pot roast, chili and apple pie. There's a nostalgic feel to getting in the kitchen in autumn and spending time laboring to create a great meal for my family. I like to save the bigger kitchen endeavors like traditional comfort foods for the weekend. But what about weeknights? We still want something cozy and homemade on crisp fall evenings – I need quick comfort food recipes.

I was able to create the best of both worlds with these easy Mini Broccoli Chicken Pot Pies. I put a spin on traditional pot pie filling by using Cheddar Broccoli Soup Mix, and while the cheesy filling simmered on the stove I baked the pastry shells. Puff pastry shells can be found in the grocer's freezer, and they are so easy to prepare – just pop them on a sheet pan and bake. No messing around with rolling pins and crimping pie crusts. These cute pastry shells have a buttery, flaky crust that pairs well with the creamy broccoli chicken filling.

Mini Broccoli Chicken Pot Pies

Ingredients

  • 2 (6 count) packages frozen puff pastry shells
  • 1 package Cheddar Broccoli Soup Mix
  • 4 cups milk
  • 2 cups rotisserie or cooked chicken, shredded
  • 2 cups broccoli florets, cooked

Directions

  1. Preheat oven to 425°F. Bake puff pastry shells as directed on package.
  2. Meanwhile, in large saucepan over medium-high heat, whisk Cheddar Broccoli Soup Mix and milk.
  3. Cover; stir frequently. When mixture starts to boil reduce heat. Simmer until thickened, about 5 mintutes, stirring frequently. Stir in chicken and broccoli.
  4. Remove tops of pastry shells. Spoon filling into pastry shells and serve.

Tips and Hints

  • Try with turkey instead of chicken.
  • Switch it up by using your favorite vegetables. Try California blend, peas and carrots, mixed vegetables or asparagus.
  • Use buttermilk biscuits instead of puff pastry shells if desired.
