Nana's Carrot Carrot Cupcakes

We all feel the pressure to make something cutesy for a get-together, right? We want to bring something impressive – something to make people say, "Wow, I could never do that! You're so talented."

We might not want to admit it out loud, but let's be honest with ourselves: that reaction is the goal.

Well, this weekend my family is celebrating Easter, and I've been tasked with dessert for the big dinner. I told my mom I'd bring Nana's Apple Cake, but no one is expecting Nana's quite like THIS!

A few simple ingredients and the easiest icing job you can imagine, and I've got a treat that's so STINKIN' CUTE!

Whether you're celebrating Easter, or just want an adorable carrot cake treat to share with friends, Nana's Carrot Carrot Cupcakes are sure to inspire the oohs and ahhs you're hoping for!

Enjoy!

Nana's Carrot Carrot Cupcakes

Ingredients

  • 2 cups grated carrots
  • 8 oz. can unsweetened crushed pineapple, well drained
  • 2 eggs
  • 16 oz. canned cream cheese frosting
  • Orange gel icing
  • Green gel icing

Directions

Preheat oven to 375°. Combine first 4 ingredients; stir until blended. Divide batter evenly among 12 paper liners or greased muffin cups. Bake for 25 minutes; cool completely. Frost with cream cheese frosting. Use the orange icing to create the carrot by using a zig-zag motion to form the shape of a triangle. Use the green icing to create the carrot greens. Makes about 12 cupcakes.

Tips and Hints

  • These are incredibly moist cupcakes. I recommend frosting them as soon as they're cooled and try not to store them for more than a day before serving.
  • While the Easter bunny will sure love the carrot designs, these cupcakes could be easily decorated for ANY celebration!
