One of my fondest childhood memories is waking up in a tent to the sound of my Dad outside firing up the camp stove. Dad wasn’t much for cooking at home, but on our annual camping trips, he loved whipping up homemade pancakes with a sizzling side of bacon. I especially loved it when he tossed in a handful of fresh-picked blueberries.
It’s been more than 30 years since I last tasted those pancakes, but it was a happy memory revived when I picked up a package of Tastefully Simple’s new Blueberry Oat Bar Mix. Knowing the versatility of TS products, I couldn’t help wondering if I could use the mix to recreate Dad’s blueberry pancakes – this time with the wholesome addition of oats and flaxseed in the mix.
After just a little experimentation, I made it into a simple batter that fried up into delicious, surprisingly fluffy hotcakes. The sweet blueberries and light brown sugar flavoring took me right back to that long-ago campsite. I call 'em Oat-M-G! Blueberry Pancakes, and I’m pretty sure my Dad would have approved.
Blueberry Oat Bar Mix is my favorite of Tastefully Simple’s new seasonal line. I keep a pan of bars, prepared as directed, baked up as a grab-n-go option for those mornings I don’t have time for a sit-down breakfast.
Made into crispy-chewy cookies, they’re a delightful treat to tuck into a lunchbox or offer with a glass of milk after school. They can even serve as the crust for a dessert pizza topped with cream cheese and sliced, fresh fruits.
My advice? Don’t be afraid to experiment a little with the Tastefully Simple products you love. They’re crazy delicious and incredibly easy by design … just waiting for your creativity to transform into something extraordinary!
