Paleo BBQ Meatballs

Are you READY? "Ready for what ...?" you might ask. 

Tomorrow is Christmas Eve. The day after that is Christmas Day. And then just a short week later it's already New Year's Eve!

We're already in the thick of college football bowl games. Pro football playoffs start soon, too. 

Whether you like it or not, we're in the heart of get-together season! From holiday parties to game-day gatherings, you're probably going through your fair share of appetizers. 

Appetizer recipes can be particularly challenging if you're trying to follow a nutrition plan like I am. I've told you before that I eat mostly Paleo. 

When we go to parties, I try to bring an easy appetizer recipe that follows Paleo guidelines. But appetizers in general can be tricky. It seems like every appetizer is loaded with carbs, use dairy or contain a sauce with lots of sugar. 

Veggie trays are a nice option for a healthy appetizer, but I like to bring something a little more exciting from time to time. 

I usually try to bring a Paleo version of a party favorite. I found an awesome Paleo recipe for BBQ meatballs, including the sauce! I'll have an appetizer to fit my needs at the party and I'll still be bringing something others will like.

Paleo BBQ Meatballs

Ingredients

Directions

Preheat oven to 350°. Combine ingredients, including almond flour, if desired, in a bowl until well mixed. Use a tablespoon to scoop mixture; roll into balls. Place evenly spaced on a baking sheet. Bake for 10 minutes. Place meatballs in a slow cooker. Add 2-3 cups Paleo BBQ Sauce (https://www.tastefullysimple.com/recipes/paleo-bbq-sauce-646595) or your favorite BBQ sauce. Toss to coat. Warm until heated through. Makes 28-30 meatballs.

Tips and Hints

  • You can make these ahead of time! Just bake them and put them in the refrigerator until an hour or two before the party!
  • When making the BBQ sauce, feel free to adjust ingredients to fit your taste. A little more chili powder for smoky spice. A little more honey or maple syrup for sweetness, etc.
  • You can make these with different proteins. You could try a pound of ground turkey and a pound of ground beef for a leaner option.
