Peppermint Chocolate Cookies

I love putting candy canes on the tree. They add great color, and they're small enough to tuck anywhere.

And, um, then I can pull the candy canes off and eat them. I can't help it - they're minty and delicious, they last for a long time, and they're reasonably low-calorie (and fat-free). Just perfect for a little mommy moment. Then, when it's time to kick it up a notch, they go great with chocolate - just like these cookies.

Peppermint Chocolate Cookies

Ingredients

  • 1 package Truffle Fudge Brownie Mix
  • ½ (8 ounce) package cream cheese, softened
  • ¼ cup butter, melted
  • ½ (16 ounce) contianer white frosting
  • Peppermint candies or candy canes, chopped

Directions

  1. Preheat oven to 350°F. In large bowl, combine Truffle Fudge Brownie Mix, cream cheese and melted butter. Stir until dough forms (using hands if necessary).
  2. Roll into 1-inch balls; place on a large baking sheet. Bake 12-15 minutes. Cool completely.
  3. Frost top of cookies and sprinkle with chopped candies. Store in an airtight container.

Makes about 30 cookies.

Make Ahead & Freeze: Prepare step 1. Roll into 1-inch balls and place in a gallon freezer bag or storage container between sheets of wax paper. Seal well, label and freeze. Continue with step 2, adding 1-2 minutes to bake time.

Tips and Hints

  • Cream cheese frosting or chocolate frosting may be used. For a more festive look, tint white frosting with a couple of drops of red or green food coloring.
  • The cookies don't spread too much, so you can place them within one inch of each other on the cookie sheet.
  • Replace chopped peppermints or candy canes with finely diced dried fruits.
