Simple Holiday Cookie

One of my favorite holiday childhood memories is baking my mom's famous homemade sugar cookies. I always made sure to taste test the cookie dough to ensure they were good enough for everyone else to eat.

Now that I am in my own home and ready to make my own holiday traditions, I wanted to find a cookie recipe that was quick and easy but similar to my mom's sugar cookies. (Emphasis on the quick and easy. I am not the world's best cook or baker; just ask my husband about the first time I made chocolate chip cookies for him. Let's just say I added double the amount of salt needed. Sorry, honey!) Anyway, when I stumbled upon these simple thumbprint cookies made with Absolutely Almond Pound Cake Mix™, I knew they would be a winner. Plus, it's a recipe from the Cookie Exchange Collection, which is full of awesome recipe cards, products and other tools to make your holiday baking simple!

The simplicity of mixing only three ingredients + rolling into small balls and pressing a thumbprint into each cookie and topping with your favorite fruit spread like Rhubarb Strawberry Fruit Spread = success! They were a hit with my husband, and I can't wait to bring them to the table at Christmas for my own family.

Absolutely Almond Thumbprint Cookies



  1. Preheat oven to 350°F. In large bowl, combine Absolutely Almond Pound Cake Mix™, butter and egg; mix until well combined.
  2. Using hands, knead until the consistency of thick, moist dough. Form into generous 1-inch balls.
  3. Place 2 inches apart on a greased large baking sheet. Bake 10 minutes. Remove from oven; using back of a teaspoon or thumb, make a round indentation in each cookie. Fill with Rhubarb Strawberry Fruit Spread. Continue baking 4-6 minutes or until lightly browned.

Makes 8-10 servings.

Make Ahead & Freeze: Prepare through step 2. Place in a gallon freezer bag or storage container between sheets of wax paper. Seal well, label and freeze. Thaw completely. Preheat oven to 350°F and continue with step 3.
