Alright, let’s just cut to the chase here. I LOVE potatoes.
Not just like, "oh potatoes are my favorite food" kind of love. I mean like real love … like 'running-through-a-sun-kissed-prairie-into-each-others-arms' kind of love.
Remember that scene from Forrest Gump when Bubba starts rattling off all the different kinds of shrimp you can make? You can barbecue it, boil it, broil it, bake it, saute it. There’s, uh, shrimp kabobs, shrimp creole, shrimp gumbo. Pan-fried, deep-fried, stir-fried. There's pineapple shrimp, lemon shrimp ...
Well, that’s how I feel about potatoes. You can bake them, fry them, grill them … even slow-cook them! There’s, uh, baked potatoes, mashed potatoes, French fries, waffle fries, twice-baked potatoes, hash browns, American fries, potato wedges …
Have I made myself clear? I l-o-v-e potatoes. So here, I give you an awesome, deliciously easy mashed potato recipe that you can make in the slow cooker.
This frees up stove-top and oven space when you’re making a big meal for a crowd (think Thanksgiving or Christmas). Or maybe you’re entertaining for New Years or a big football party. Either way, these loaded mashed potatoes are sure to be a hit.
Start by cutting about 2 lbs of potatoes into 1-2 inch chunks. No need to peel!
Place them in a slow cooker and cover. Cook on low for 2-3 hours.
When potatoes are cooked, add the following ingredients right into your slow cooker: ½ cup sour cream, ½ cup milk, 2 Tbsp. Bacon Bacon, 1 packet Artichoke & Spinach Sauce Mix and 1 cup shredded Cheddar cheese.
You can use a hand mixer to blend these all together. (Using an electric mixer is so much easier than mashing these by hand.) You should get a wonderfully, creamy consistency.
If you feel like your potatoes are dry or pasty, you can mix in some additional milk, ¼ cup at a time.
Serve these rich and delicious loaded mashed potatoes with crumbled bacon or sliced green onions on top.
