Slow Cooker Taco Chicken

My daughter has a new beau, so we have been indoctrinating him into our culture of ranking everything we eat on a scale of 1 to 6. He seemed to be playing along - then last night, whammo! - he ranked my taco chicken a 6! But wait .. there's more. He expressed concern that with all the recipes trials going on at our house, we may never make taco chicken again. Oh yes, I'm liking this guy ... nothing wrong with knowing how to win over your girlfriend's mom, right?

Slow Cooker Taco Chicken



Grease slow cooker; add the first five ingredients in order listed. Cook 6-8 hours on low; shred. Makes 4-6 servings. Great for chicken tacos!

Tips and Hints

  • This is incredibly easy to throw into the slow cooker before work!
  • My husband shredded the chicken when he got home and kept it in the slow cooker until dinner, allowing it to soak up the delicious broth ... yum.
  • We served the chicken in whole wheat tortillas with cheese and Corn, Black Bean Salsa, garnishing with shredded lettuce and sliced tomatoes and black olives.
  • The chicken would be wonderful in your favorite taco recipe or in enchiladas.
  • This could easily be converted to a freezer meal, or make extra and freeze the cooked chicken for later use.
