Spice Up Your Seasonal Veggies

Oh, summer! We're getting way too close to the end for my preference. But I love that the end of summer brings a wide variety of vegetables that are in season. And with my goal to eat two cups of veggies with every meal, I need to put a little effort into not getting bored.

I’m no expert in gardening, but I'm blessed with a mother-in-law who keeps an amazing garden. So every August I get a bounty of bell peppers, zucchini, yellow squash, cucumbers, tomatoes and, of course, sweet corn! If I left veggie options in my kids' hands, we'd have boiled corn on the cob every night with butter and salt. But Mama needs life to be a little more interesting than that.

That's why I love tastefullysimple.com! I started digging into recipes using this harvest of vegetables. Here are a few of my favorites.

Fire Up the Grill
Since we're going to keep the grill going as long as we can before the snow flies in Minnesota, I convinced my husband to make room for some vegetables along with our meat. Grilled Veggies with Artichoke & Spinach Dip is fantastic. It’s a wide range of grilled vegetables served with a cool and refreshing dip. We also tried Grilled Zucchini. It's garlicky and delicious. Although my kids have a hard time getting excited about zucchini, it was a great treat for my husband and me.

Shake Up Sweet Corn
There are so many great ways to grill sweet corn. A simple twist is to use Seasoned Salt rather than table salt to give it a little more flavor. We decided to get even more adventurous. We tried Lime Cilantro Grilled Corn - I went for this one because Cilantro is also in season right now. It was a fun new twist on an old favorite. We also tried Fire Roasted Corn on the Cob. The spice was a bit much for two of my kids, but the third one was a fan. Grilled Corn on the Cob was another one we tried. It was tasty. It's made with Garlic Garlic™ Seasoning. And it turns out that garlic is in season right now. But that’s sort of a moot point in my home because it’s always in season at our house since we’re never without a jar of Garlic Garlic.

Don't Forget a Salad
Before the weather turns cold, I like to enjoy as many salads as I can. As I'm just getting started on my search for salads with seasonal vegetables, I did try Zucchini Ribbon Salad. I wasn't confident in my ability to make strips of zucchini with a vegetable peeler, but it was easier than I expected. This salad has just the right combination of flavors, and left me excited to seek out more salad ideas.
