Oh, summer! We're getting way too close to the end for my preference. But I love that the end of summer brings a wide variety of vegetables that are in season. And with my goal to eat two cups of veggies with every meal, I need to put a little effort into not getting bored.
I’m no expert in gardening, but I'm blessed with a mother-in-law who keeps an amazing garden. So every August I get a bounty of bell peppers, zucchini, yellow squash, cucumbers, tomatoes and, of course, sweet corn! If I left veggie options in my kids' hands, we'd have boiled corn on the cob every night with butter and salt. But Mama needs life to be a little more interesting than that.
That's why I love tastefullysimple.com! I started digging into recipes using this harvest of vegetables. Here are a few of my favorites.
Fire Up the Grill
Since we're going to keep the grill going as long as we can before the snow flies in Minnesota, I convinced my husband to make room for some vegetables along with our meat. Grilled Veggies with Artichoke & Spinach Dip is fantastic. It’s a wide range of grilled vegetables served with a cool and refreshing dip. We also tried Grilled Zucchini. It's garlicky and delicious. Although my kids have a hard time getting excited about zucchini, it was a great treat for my husband and me.
Shake Up Sweet Corn
There are so many great ways to grill sweet corn. A simple twist is to use Seasoned Salt rather than table salt to give it a little more flavor. We decided to get even more adventurous. We tried Lime Cilantro Grilled Corn - I went for this one because Cilantro is also in season right now. It was a fun new twist on an old favorite. We also tried Fire Roasted Corn on the Cob. The spice was a bit much for two of my kids, but the third one was a fan. Grilled Corn on the Cob was another one we tried. It was tasty. It's made with Garlic Garlic Seasoning. And it turns out that garlic is in season right now. But that’s sort of a moot point in my home because it’s always in season at our house since we’re never without a jar of Garlic Garlic.
Don't Forget a Salad
Before the weather turns cold, I like to enjoy as many salads as I can. As I'm just getting started on my search for salads with seasonal vegetables, I did try Zucchini Ribbon Salad. I wasn't confident in my ability to make strips of zucchini with a vegetable peeler, but it was easier than I expected. This salad has just the right combination of flavors, and left me excited to seek out more salad ideas.
