Hotdish. Church potlucks. Not digging your “heavy” winter coat out of the closet until the temperature hits below zero.
As a farmer's daughter in the heartland, I grew up with more than my share of lefse, Jell-O “salads” and homemade bars. However, I had never tasted wild rice until I moved to Minnesota when I was 23. And you know what? It changed everything. In fact, Creamy Wild Rice Soup Mix has been one of my favorite Tastefully Simple products for years. But this week, I discovered a new recipe to make it EVEN better … Rustic Chicken Wild Rice Soup!
So rich and hearty, this family-style dish is featured in the One-Pot 10-Meal Kit. (Oh, and if you're not familiar with the kit, it includes everything you need to make 10 dinners in just one pot or in your slow cooker. In other words, all the deliciousness – without all the mess!)
Perfect for a lazy Sunday dinner, this cozy wild rice soup is brimming with creamy broth, tender chicken, rustic herbs and fresh veggies. And best of all, it's easy!

Let's Stir Up Some Soup
Here's a quick step-by-step look, complete with photos. See the full recipe here »
Step 1: Veggies
Grab a cutting board and your veggies. You'll need 1 cup chopped carrots and 1 cup chopped celery. You can also add ½ cup chopped onions if you'd like.
Step 2: Chicken & Seasonings
In a large saucepan or Dutch oven, heat 1 tablespoon vegetable oil over medium-high heat. Add 1½ pounds boneless chicken breasts, seasoned with salt and pepper. Tip: I chopped my chicken breasts into bite-sized chunks, but if you prefer, you can just toss in whole chicken breasts and shred them when the soup is ready!
Toss in your chopped veggies, 2 teaspoons Garlic Garlic™ Seasoning and 1 teaspoon Rustic Herb Seasoning. Sauté about 5-6 minutes.
Step 3: Soup Mix
Meanwhile, in a large bowl, whisk 1 package Creamy Wild Rice Soup Mix with 5 cups hot water.
Pour the soup mixture into your saucepan. Simmer, covered, about 45 minutes, stirring the soup occasionally. Stir in ½ cup half & half before serving. And ta-da!
You've got a cozy, delicious, one-pot dinner that your whole family will love.
And even if you're experiencing cold wintry weather like we are, I hope this little taste of Minnesota warms you all the way down to your toes!
Tips & Hints:
- Serve with mixed greens, thick slices of Bountiful Beer Bread® or dinner rolls.
- Want to make the soup in your slow cooker instead? Just toss in the chicken, veggies and seasonings. Whisk your Creamy Wild Rice Soup Mix with water as directed, pour it over on top, and cook on low 5-6 hours. Stir in the half & half right before serving.
- For an even richer soup, use ½ cup heavy whipping cream instead of half & half.
