Thanksgiving Leftovers Turkey a la King

In my opinion, nothing beats a lovely fall day in Minnesota. The brisk autumn air, gorgeous views of the changing leaves, a think coating of frost on my car in the morning ... ok, so not EVERYTHING about fall is fabulous in Minnesota. But on the plus-side, the cool temperatures bring a plethora of comfort food into our kitchen. Soups, casseroles, slow-cooker meals ... I love it all!

Now, I know it's not quite here yet, but I've already got Thanksgiving on the brain this cool autumn day. Surely, you'll have leftovers this year, particularly, leftover turkey. So in the spirit of comfort food and Thanksgiving leftovers, ladies and gentlemen, I give you a dish so good, it really does deserve an introduction ... Leftover-Turkey A La King! Whether you serve it on leftover mashed potatoes or with delicious fresh biscuits, this is one comfort food worth bragging about!

Leftover Turkey a la King



Whisk first three ingredients in large kettle on medium heat. Simmer, uncovered, for 10-15 minutes, stirring occasionally. Add turkey and frozen vegetables. Heat over low for 15-20 minutes, or until vegetables are cooked. Add salt and pepper to taste. Serve over leftover mashed potatoes.

Tips and Hints

  • You can use whatever vegetables you wish. I grabbed a medley of cut, frozen green beans, corn, carrots, lima beans and peas.
  • I really wanted a thick sauce, so I started with 4 cups of water. The soup mixture got so thick before I added the vegetables and turkey that I ended up adding 2 more cups during the cooking process. You can use more or less water to achieve your desired consistency.
  • If you're like me, you layer your thanksgiving plate with mashed potatoes, stuffing, then gravy, top it with a little corn, and eat it all together! I know ... not the classiest way to eat Thanksgiving, but I assure you, it's the tastiest! Anyway, I bet this would be amazing served on leftover stuffing as well!
