Tuesday Tip: Fix Dinner in a Flash

Summer is winding down, and back-to-school weeknight madness is right around the corner – or it may be here already for some of you (sigh). 'Tis the season for more activities, homework and picking up the kiddos from school.

Here's a way to take one headache off the table: plan ahead for what's for dinner. Start simple by preparing one Tastefully Simple meal on Tuesday nights the whole family will love.

Why not try the Bayou Chicken Lettuce Wraps? It comes together in a flash and everyone will love it! This dish offers maximum flexibility with a minimum of fuss. Kids don't like mushrooms? Leave 'em out. Out of peanuts? Try slivered almonds, sunflower seeds or something else you have on hand. Make the meal work best for your family.

Bayou Chicken Lettuce Wraps

Ingredients

  • 1 tablespoon vegetable oil
  • 1½ pounds ground chicken or turkey
  • 1 (8 ounce) package fresh button mushrooms, chopped
  • 1 cup shredded carrots
  • 1½ tablespoons (or 1 Dinner Mixer packet) Onion Onion Seasoning
  • ¼ cup (or 1 Dinner Mixer container) Bayou Bourbon Glaze
  • 1 tablespoon cornstarch
  • 18-24 green lettuce leaves
  • Chopped green onions, chopped peanuts, chopped cilantro

Directions

  1. In large skillet, heat oil over medium-high heat. Add chicken, mushrooms, carrots and Onion Onion™ Seasoning. Salt and pepper as desired.
  2. Cook and crumble until chicken is cooked through and no longer pink, about 5-6 minutes. Stir in Bayou Bourbon™ Glaze and cornstarch. Cook 1-2 minutes.
  3. Serve chicken in lettuce leaves topped with green onions, peanuts and cilantro.

Makes 6 servings or 4 servings + 2 leftover servings.

Serve with Simple Bayou Noodles.

Wine Pairing: Sauvignon Blanc

Make Ahead & Freeze: Combine chicken, mushrooms, carrots and Onion Onion™ Seasoning in a gallon freezer bag. Place Bayou Bourbon™ Glaze in a quart freezer bag. Place both bags in a gallon freezer bag. Seal well, label and freeze. Thaw completely. Continue with step 1.

For remix Bayou Chicken Pasta Salad recipe: Place 2 servings leftover chicken filling in a storage container. Place 2 servings leftover chopped cucumbers and chopped peanuts in separate storage containers. Refrigerate up to 2 days.
